Cheese of Tafí del Valle

One of the specialties of Tafí are aged cheeses, made from cow's milk.

From techniques passed down by the Jesuits, the ranches of Tafí de Valle craft their cheeses leaving their trademark stamp upon them.

Naturally flavored with chili, pepper, or oregano, their cheeses offer tourists an interesting mixture of color and taste.

February marks the annual Cheese Festival, celebrating the local product for its excellence.
